For the starter, indulge in Wagyu Bresaola accompanied by horseradish aioli, Parmigiano Reggiano, crispy capers, and croute. Next, experience the delicate taste of seared Queensland scallops, elevated with Oscietra caviar, cauliflower cream, and dill oil. Savour the pan-fried Barramundi fillet, complemented by harissa, piquillo peppers, asparagus, and chive for a burst of fresh, vibrant flavours. Relish in the succulent 25-day dry-aged Wagyu rump cap, accompanied by potato croquette, blistered cherry tomatoes, broccolini, and a rich red wine jus. Conclude your experience with a classic opera cake, garnished with cocoa sugar and fresh raspberries.
